Dark Rye Bread

 

Ingredients:

  • 1 ⅛ cups water
  • 2 tablespoons molasses
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 2 cups all-purpose flour
  • 1 ½ cups rye flour
  • 3 tablespoons packed brown sugar
  • 1 tablespoon unsweetened cocoa powder
  • ¾ teaspoon caraway seeds
  • 2 teaspoons bread machine yeast

Instructions:

  1. In a large bowl, combine water, molasses, and vegetable oil.
  2. Add salt, all-purpose flour, rye flour, brown sugar, cocoa powder, and caraway seeds.
  3. Mix in bread machine yeast.
  4. Knead the dough until smooth and elastic.
  5. Place the dough in a greased bowl, cover, and let it rise until doubled in size.
  6. Punch down the dough, shape it into a loaf, and place it in a greased 9x5-inch loaf pan.
  7. Cover and let it rise again until doubled.
  8. Bake at 375°F (190°C) for about 30 minutes, or until the bread sounds hollow when tapped.
  9. Remove from the pan and let it cool on a wire rack before slicing.
