Recipe of The Week: Dark Rye Bread

Dark Rye Bread
Ingredients:
- 1 ⅛ cups water
- 2 tablespoons molasses
- 1 tablespoon vegetable oil
- 1 teaspoon salt
- 2 cups all-purpose flour
- 1 ½ cups rye flour
- 3 tablespoons packed brown sugar
- 1 tablespoon unsweetened cocoa powder
- ¾ teaspoon caraway seeds
- 2 teaspoons bread machine yeast
Instructions:
- In a large bowl, combine water, molasses, and vegetable oil.
- Add salt, all-purpose flour, rye flour, brown sugar, cocoa powder, and caraway seeds.
- Mix in bread machine yeast.
- Knead the dough until smooth and elastic.
- Place the dough in a greased bowl, cover, and let it rise until doubled in size.
- Punch down the dough, shape it into a loaf, and place it in a greased 9x5-inch loaf pan.
- Cover and let it rise again until doubled.
- Bake at 375°F (190°C) for about 30 minutes, or until the bread sounds hollow when tapped.
- Remove from the pan and let it cool on a wire rack before slicing.
